Great sushi is great and average sushi is usually meh. As someone who’s eaten sushi for many years, I can tell the difference. My search in the Boise area up to now had yielded mediocre to passable sushi. Finally, though, I tried Ahi Sushi Bar in Eagle. They had been suggested by several people as the place to go. Indeed, this is one of those sushi bars where everything comes together. The fish is fresh, the sushi chefs creative without going overboard, the atmosphere friendly. Ahi Sushi is a nice size, with plenty of tables for dining. The sushi bar itself is a large one so plenty of guests can enjoy sitting there.

Salmon Skin Cut RollThe sushi was fresh and nicely prepared. Yellowtail sushi was perfect, just the two pieces of fish on nicely seasoned rice. The Salmon Skin Cut Roll surpassed most versions I’ve had, flavorful and with crunchy bits of salmon skin and goba yielding a nice texture. The chef suggested a roll called the A-Bomb, with tuna and salmon and avocado. The was a nice roll, the two types of fish tasty and presented nicely in the roll which was topped with chopped jalapẽnos.

Ika-Chuga SaladOne thing that is nice about a good sushi bar is that people at the bar tend to be friendly. As I sat eating my yellowtail, the woman next to me received a gorgeous bowl. I commented to her how nice it looked and she proceeded to take one of the little sauce dishes and give me some to taste. This was a non-menu item, the Ika-Chuga Bowl; and it was delcious. I just had to order one for myself. The bowl had sliced octopus, seaweed salad, octopus salad, avocado and a topping of tobiko, the delicious fish roe. This was not only a beautiful dish, but all the flavors blended well. It was refreshing with just a little kick. I had never had this before and it served to show what the sushi chefs at Ahi Sushi could do.

Ahi Sushi Bar also has a variety of bento boxes for non-sushi eaters with items such as teriyaki chicken, Island style ribs, katsu pork and tempura veggies. They also have a Happy Hour menu with beverage, sushi and appetizer specials. They are located right off of Old State Street and Highway 44. Ahi Sushi is open Monday through Saturday. For fresh, creative and delicious sushi, Ahi Sushi seems to be the place to go in the Treasure Valley.
